In-deep analysis of food waste components
A bachelor’s student at the LOWINFOOD partner Swedish University of Agricultural Sciences, Runa Halvarsson, has conducted a food waste composition analysis for her thesis project. For eight days, she has been separating the food waste components to the degree possible in 2 school kitchens in the municipality of Uppsala, Sweden, of which one had been participating in LOWINFOOD innovations last year including the food waste tracker and educational meals concept.
The aim is to find out the proportions and amounts of the wasted food components. On the day the pictures were taken, the school meal menu included rice with chicken or vegetarian curry and some vegetables in a buffet, so it was possible to separate most of the components from the rice, except for the sauce.
